In Paris restaurants are filet steaks sauteed in butter?

    Some do it, some others don't ~~ Most time they are cooked on the grill ( without oil or  butter). 

    By the way, I'm French and I think ' cook steak ' in the butter is rather done in the North of France, especially in Normandy. They put much butter in their dishes. 

    Butter is the specialty of this area.

    They can be.

    MOST chefs will prepare it your way if the use of butter is essential for you or use something else if you do not want butter.

    All Parisian restaurants do not prepare steak in the same way.
