Can you use oyster mushrooms for stuffed mushroom recipe?

    Not really, they dont have the depth / area for the stuffing.

    You could chop & add them to the filling to fill big cupped mushrooms.

    Bacon, dolcelatte & herby breadcrumbs make a good filling, with chopped mushroom stalks.

    They do not have the right shape cap to stuff. You could use them as part of the stuffing in a mushroom with a rounded cap. (Crimini, White, "baby bellas" Portabella are all fine for stuffing.)

    You need a mushroom with a cup/bowl shape for stuffed mushrooms. Oyster mushrooms don't really have that shape.
