I've a fillet of smoked herring in my fridge and some Italian tomato/onion cooking sauce and herbs. Will the herring go well done in this?

I have often had fish in tomato sauce before, but normally either white fish or tuna not a smoky, oily fish.

It should go nicely with this sauce, but remember the herring has been smoked so it wont need as much cooking as the raw white fish.

    Sure.

It's not really that much different from putting sausage in the tomato sauce.

If you're concerned about the consistency, just make sure to compensate for the additional oil
