It shouldn't have much effect on the sound, but in cars made after 1995 it will set the check engine light and may put the vehicle into limp mode.  OBDII systems monitor the performance of the cats with two oxygen sensors, upstream and downstream,  to detect a non-working cat and set a trouble code.

Yes, because the cats are always in HEAT.  ALL THAT SCREECHING and growling is hard on the ears.  They also puke in the car.

It does but only to a trained ear like a smog station person.  Good luck.  Those guys know if a vehicle cat has been removed 50 yards away.

Yes, when I put my cat in the car there is a very different sound than when she is not.  MEOW... MEOW... MEOW...

The Catalytic converter has NOTHING to do with sound. Your car WILL NOT run properly without it.
