Does parsley add flavour to falafel?
A lot of recipes call for it. Not sure if that is to give it some green on the exterior (for visual purposes) or if it adds flavour.
Would they taste the same if I left them out?

There's a lot more to parsley besides a pleasing green color.Of course it adds taste,and no the taste of the falafal would not be the same without it.Thats provided you like the taste of grass ! No,jk,but it does have a fresh "leafy" taste that many of us enjoy.Absolutely necessary for a falafel,NO,but it does add flavor.

ive eaten with and without parsley.. personally I do like the parsley taste in mine, but without is just as good

Falafels need flavor, to add to the blended chick peas, parsley does'nt give a lot of flavor, but , like you say adds color.
Why not add fresh chopped chives? so you will get flavor & color.
A little cumin & chopped garlic is good too.

Parsley has a medium leafy flavor. It also adds an herby texture without the overpowering flavors of other herbs like rosemary or mint. Both points, as well as the sheer appearance will change the overall experience of the food.

Yes, parsley does add a bit of flavor to falafel.

It does add a bit of flavor sort of an herbal, grassy note.
In most recipes you can omit it but if your recipe is calling for 1/2 Cup or more it will add more than just a little flavor and you should add it.
But only if it is fresh, I would not sub dried for fresh in something like falafel.

Of course they wouldn't taste the same, but still good.
