What does it mean when a cat’s ears are down and to the side, like airplane wings?

Some cats' ears are like that anyway, but otherwise it's because the cat is angry or indeed terrified. The ears flatten to help protect them in the event of a fight.

Usually cause the cat is angry/upset or scared.  Its a warning that the cat may attack.

    It's probably scared or furious.

This MAY be symptomatic of severe ear infection or parasite infestation......which can be treated.  It is not a normal trait.   You can gently fold the ear back to visualize the external canals and if there is dark debris,  you should take him/her to a Vet. to diagnose and provide appropriate medication.  If the cat scratches his ears, this is a pretty good indication that something is wrong.  This requires serious treatment.
