why do people go on "diets" ? why not just adjust your eating to a normal , healthy diet and just very gradually lose weight?

i mean the whole idea of cutting calories below what your body will need to operate without feeling hungry is not a good plan is it? so you half way starve yourself for a few months and lose 15 lb. of weight ....but then go back to eating more again and gain half of that back. why not just pick out a normal amount of calories to consume and stick with that and just slowly gradually lose weight?
