if I put a tree leaf in the epoxy resin, does the leaf retain its colors and stop deteriorating?

It would still be subject to optical bleaching and reactions between the compounds present in the leaf itself, so I'm going to say no. It would last longer, particularly if it was stored in cold, dark conditions.

Just like that? No. It'll still retain the water and it will have a few anaerobic bacteria clinging to it, so it will deteriorate. You'll have to remove the water from the leaf first - and in most cases, that process will destroy the colours.
