Ask a furnisher restorer, which would be the best adhesive to use.

Use a good contact adhesive, "evostik" or similar.

Work it well in to the grain on the back of the leather using a spreader of some sort, then apply a layer to the desk top.

When both parts have dried, very carefully position the leather over the desk and lower it in to position - it will "grab" as it touches.

To make it easier you can put a sheet of plastic or cardboard over the desk top so only a small amount of teh glue surface is exposed and you can position the leather accurately to that, then slowly remove the separator as you work along and align the edges of the leather to the proper positions.

If the back of the leather is really rough or porous, it may need an extra coat of glue after the others have set, just before putting the two together.

For accurate positioning doing that, use the separator and apply the extra layer just to the exposed narrow edge you are starting with.

Set the leather in place on that then once that has started to hold, fold it back away from the desk and apply the extra coat to the rest of the surface, then gradually slide/roll the rest of the sheet in to place.
