My uncle is an alcoholic. Is my mother enabling by asking me to keep his alcoholism a secret and by serving alcohol when he is there?

    Yes. The start to recovery for an alcoholic is admitting they have a problem. If both others and himself cannot be aware of the problem that is at hand, he cannot build a good foundation for getting better. While you don't need to shout it from the rooftops, nor do you need to make him go cold turkey, I suggest sitting down with both of them (not at the same time) and tell them how each of their actions is affecting you. Be supportive of your uncle, but try to get him to admit that he needs help and that it is okay to ask for help.

    Yes. Because to anyone with any kind of cop-on, your uncle's alcoholism will be obvious.
