Are zip loc bags more airtight that Rubbermaid food containers? ?

Depends on what you put in them.
It is easier to get the air out of a ziploc bag than a rigid container.

Just putting food in a bag or in a container as long as it is sealed and there are no leaks bot are air tight. I prefer containers as bags have a tendency over time to leak, the bag is porous to some extent.
If you want to remove all air a bag would be the way to go. Fill a large container with water. With the bag open begin to submerge the bag the air will be pushed out once the zipper portion is almost to the water level zip it up. There should be very little air in the bag at that point.

Not in my opinion, but you can squeeze out the extra air before you seal them which is something you cannot do with a solid airtight container.
