People skip what they can, in order to survive financially, even if you have to call it something besides fajitas.

I don't like green peppers, only red or yellow. And i have sometimes skipped the peppers. It's up to the cook as to what they want to do

I leave out the green bell peppers, they taste too 'earthy' for me, I usually just add some strips of red or yellow ones instead.

I don't because I like bell peppers and they add texture.

When I make fajitas the basic ingredients are chicken, onions and bell peppers. It's the combination I like so I wouldn't miss any of them out.

Where do you live where bell peppers are more expensive than chicken?

Bell peppers add colour and indeed flavour, no bell peppers= sub standard fajitas.
