Make a second pot of soup, with no cheese, mix them together.
In the future, add ingredients a bit at a time, taste, and more until it is right.

Add milk or cream. Add onion powder. Add some diced celery and heat it until the celery is soft and cooked. You could add broccoli instead of the celery, and cook it until the broccoli is soft and falls apart. It helps to chop it up ahead of adding it to the soup.

Mature cheddar is a strong flavour which is not possible to really disguise with another ingredient.
But if you want to neutralise it then make a second batch of potato soup and then mix them to dilute the cheese flavour.
Potato soup freezes well, or if you lack freezer space then you could earn a bit of goodwill by gifting the excess to family, friends or neighbours.

Use some paprika and a nice, skinned giraffe neck. The neck makes for a delicious contrast.
