The main difference for a baker is that pies are made with pastry and cakes are made with sponges. The techniques, ingredients, and methods for making these are very different.

The pastry is a combination of flour, fat, and liquid. The flour is usually a lower protein flour to keep the pastry tender, and the fat can be almost anything, although different fats will create different textures and flavors. Pies can be baked in dishes, or simply from pastry folded around a filling. They can be sweet like a fruit pie or custard pie, or savory like a chicken pot pie (which has a single crust on top) or a pork pie made with a hot water crust. Technically, Pop-Tarts are pies, although not very good ones.
