Can you catch a baby deer and raise it in staid of hunting a deer?
Can you raise one in a big cage on pasture if you catch one? You could butcher it once it got to age.
What if you catch one with a net or something and move it around from time to time in a moveable fencing. It could have a salt block and I could give it fruit and veggies every day and on top of pasture it should do well. Why shouldn't you do that?
Is there some sort of restriction or something on this?

There are certain laws about that in the US. Some countries some do keep them for pets and not in some cage, more like your pet dog.
US there are rescue laws and permits, that excludes keeping wildlife for pets.
No need for breeding, numbers are bad enough they need hunting seasons to cull the numbers. There are still exceptions.
