Optimal temperature and humidity for Oyster Mushrooms, why are they always stated in ranges?

I'm currently researching about the optimum temp and humidity levels for oyster mushrooms, answers were usually around 22-25C and 70-80% humidity or around those values

I noticed they were always in ranges, why not just one consistent temperature and humidity? (assuming the grow room has automatic temp and humidity systems that can keep levels constant) ; research papers that I've found also state them in terms of ranges.
