Lilith didn't fit in with the doctrine that was being taught in later times, so she got turned into a scary night creature while the submissive, compliant Eve became the mother of all humans.

The story of Eve as the sole wife of Adam dates to no later than the 6th c. B.C.E.
The earliest-known account of Lilith as the "first wife" of Adam dates to no earlier than the 8th c. C.E.
That's ***at the very least*** 1,200 years between
- Adam married only Eve
and (1,200 years or more later)
- Adam married Lilith first, then Eve

Sumerian literature speaks of the "lilutu", which were female demons. The ancient Hebrews, who originated in the same part of the world, doubtless had the same concept. However, no Jewish sources that we possess connect "Lilith" with Adam until the Babylonian Talmud, which is dated 500-600 C. E. Eve did not replace her. She is an add-on.

Adam never had a first wife called Lilith. Eve was Adam one and only wife.
