at what temp and for how long do I cook 16 lbs of pork ribs and sauerkraut in a roaster oven?

    Pork ribs should be slow cooked for a long time at a relatively low temperature. I usually cook them in a smoker at 225F for about six hours. The smoker has a water tray above the heat source which adds steam. I've used a slow cooker too, which is fine, but then they don't get the smoky flavor.

    A roaster oven is going to dry them out unless you put them in an oven bag (which you certainly can do if you want to).

    You cook them till they are done and I would go at around 325 degrees.

    How long would depend on how thick the meat is and how you stack them in there.
