You can donate sheets to any Goodwill anywhere

Never donate to Goodwill. They give nothing to anyone except the owner of the company.

Most thrift stores will accept linens, but you should call the store and ask them directly whether they will take them. What they do with them after that is up to them.
Please note that anything you donate, to whatever agency you donate it to, should be in usable condition. If what you are donating isn't nice enough to give to your kids or mom because it's just too stained, torn, worn-out, then ask yourself what you expect anyone to do with it when you donate it.
Thrift stores are not dumpsters. When you donate things that are so worn out they can only be thrown away, then you are forcing the charity to dispose of it - and that costs money. In effect, that is taking money AWAY from the charity. Please don't do that.

Many of the store's websites have online lists of things they will not accept.
