Should I actually sit Gurley this week?
He has a tough matchup in TB, and I still have Fournette, Lindsay, and James White

First, you should always list matchups and scoring (PPR/non PPR). This is all that matters with most players.
With Gurley, the Bucs are tough on run def, but game script has him in a great position. Goff at home is a beast, and he should have a killer day. This sets up the run. Also, Winston is on the road vs a very tough defense and Godwin may not even play. The score should be very unbalanced in favor of Rams, and that always sets up well for an RB.

No! You’re over thinking it.

Todd Gurley has knee problems that may prevent him from having a heavy workload like he did in the past. Oh well, such is life for a typical NFL running back from today's modern era.
