Buy a package of either hot or sweet Italian sausage, one red pepper, one green pepper, one onion and your favorite tomato sauce.

Parboil sausage: In a skillet, add the sausage links and fill with water until the links are covered. Boil until the links are plump, about 20-30 minutes. Pierce the links with a fork to release all of the excess fat. Remove liquid from pan, the links will be cooked enough so you can cut them without the meat crumbling or falling apart. Cut on the diagonal for lovely oval shapes. Sautee the links in some olive oil, a sliced green pepper, red pepper and one sliced medium onion with a minced clove or two of garlic.

When the sausage mixture is fully cooked, drain the pan and add your favorite pasta sauce, plus any fresh or bottled herbs (oregano, rosemary, sage, thyme). Serve this with shaved parmesan cheese, with a good loaf of Italian bread and you are good to go. There are never any left overs when I make this dish.
