When you release the pressure on the refrigerant can, the liquid refrigerant boils and vaporizes. When a liquid changes into a vapor it absorbs heat. This is the basic way that an air conditioner works. The compressor compresses the refrigerant gas and converts it to a hot liquid. The liquid passes through the condenser where it gives up its heat. The it goes through a small orifice into the low pressure evaporator where it turns back into a cold vapor. A fan blowing across the evaporator cools the air that comes out of the ducts. Same principle that you can feel if you wet the back of your hand and blow on it, just at a larger scale.
