Which Navy rate would fire the ship mounted weapons in a combat situation?

    Gunners mates

    With help from fire control technicians

    Plus other rates might man 50 cals

    if you are talking about CIWS or the missiles, thats mostly FCs who man the control panel. GMs would handle the smaller stuff.

    all depends just which weapons you're firing.

    You have GM's Gunners Mates, , FT's Fire control Tech's. hell, BM's can man fire hoses to repel boarders and small craft trying to approach.
