Why are so many video games these days are so realistic they can look like reality?

It's a marketing ploy so publishers don't have to make good games that are fun anymore. Just games that look good. They will charge you extra for the fun in terms of microtransactions to speed up the grind, etc.

Because they are basically animated movies where only about twenty percent involves actual game play.

You must be retarded if you honestly believe that. Videogames look no more realistic today than they did in the 90's, the only difference is that they use a hell of a lot more post processing to make them look more eyecandish.
Particularly, you see more and more of effects that have nothing to do with reality like depth of field, motion blur, HDR (the "WOW I CANNOT SEE ANYTHING WHEN IT GO FROM A DARK SPACE TO A LIGHT ONE" effect), lens flares (god rays).
Video games are all about looking COOL not looking realistic. And they borrow their "realism" from cinema, where most of these effects are employed.
Think about how boring you could make an action movie look if you flattened the colors to look more as they do in reality than on screen. Similar antics are used to sell new TVs, giving colors more "umph" so it looks less like reality and more like... a video game.
