Why do dealers shuffle the deck and spread it out at casinos?

Do they do this to make it look entertaining or is that a necessary part of the game?

    It's a control to show security that the deck isn't marked.

    The spread, while a bit of spectacle at the table, is designed to display all the cards of the deck(s) to show everybody (mostly the cameras above the table) that all the deck is legitimate & not stacked in anyone's favor.

    The shuffle is to add the randomized element to the decks for the table games. This is usually done at least three times (with the generally riffle technique, but may be done around seven times) to properly shuffle the cards into a completely randomized order of the cards. However, some casinos have started to utilize shuffling machines to eliminate human error & potential conspiring (with the usage of false shuffles) with players.

    Dealers shuffle the deck to put the cards in random order. They want the cards in random order so players cannot predict the likelihood of specific cards coming being dealt next.

    They spread the cards out for different reasons at different times.

    When a new deck of cards is put into play they spread the cards out multiple times to inspect them, making sure all the cards are present and making sure there are no printing errors. In some games when there are no players at the table they may spread the cards out so a new player coming in can see them. In some casinos they "wash" the cards when they think a player may have been keeping track of where cards are in the deck. (Washing cards is when they spread the cards out them mix them up.)

    Dealers can deal the exact cards they want to customers. The procedure is done to show that the deck is not stacked.
