    How many are you serving?

    In any case...

Replace the corn with another veggie like spinach, green beans, peas squash, broccoli

Potatoes are fine, but if you really want the corn replace the potatoes with something else.

No need to have 2 starchy veggies along with starchy gravy and a starchy coating on the chicken.

A nice salad would be a good addition to the meal.

I would forego the gravy in any case. No need for it if you put it on the chicken the coating will get soggy and I am sure you want it crispy.
