how do you make delicious fluffy cheese eggs?

I can never get them to turn out right. whats the trick

    My sister taught me me to use water for fluffiness (fluffy eggs shouldn't be weighed down). I did it that way for decades until I discovered I much prefer the velvety, custardy goodness you get with heavy cream.

    I cook the fluffy eggs and add very finely grated cheese and not very much of it at the very end. Adding cheese early makes the eggs gummy.

    Cook on really slow heat, and when almost done add milk or cream.

    High heat , fast wisking , and add sour cream
