What's the most underrated ethnic cuisine?

    Native American. There is no restaurant I've seen that specializes in that cuisine.

    German Russian or Alsatian.

    Few people know what they are or even seek them out.

    Its delicious, unique and hard to find

    I'm voting Moroccan. Tajine is a favorite dish of mine, especially when prepared with lamb, apricots and onion. It's baked in a special pottery vessel, and is tender and absolutely delicious. It's not exclusive to Morocco, but Moroccan seems to be both consistent and most flavorful.

    I last enjoyed it in Paris a year ago, when we spent a month in a predominately Arab and Chinese suburb.

    Perhaps American Indian Food. Because I know of NO Indian restaurants in any area that I have ever lived in.

    Ukrainian. Much of other ethnic cuisines were stolen from us Ukrainians.

    I say Korean is still underrated even though it's getting more recognition. When people order takeout, they order Italian and Chinese not Korean.
