Was pizza in Italy ever traditionally made from sourdough aswell as 00 flour dough?

    No sourdough was invented in Germany centuries ago

    No Sourdough is not an Italian thing it is German and rather common in the US in the 1800 and earlier.  There has never been a Zero Flour dough in Italy

    Highly unlikely. Sourdough is an American creation. Italians would have had no concept of sourdough until recent history.
