Because all humans evolved from a common ancestor primate species, and like all evolutionary lineages we evolved different varieties of people based on what environments and regions of the world each one evolved in, and evolutionary biologists have evidence for all of that. We did not come from an imaginary invisible magical genie in the sky who cast a golem spell on a figurine made of mud.

For the same reason that nobody plants a garden with only one type of plant in it. That would be boring. People who have gardens almost always want a variety of flowers, shrubs, vines and trees in it. The variety provides much of the interest of the garden.
I trust you get the point.

He did not make races.
Scientifically, evolution made a few races of humans, but we - Homo Sapiens Sapiens - are the only one left. Genetic similarity suggests we almost went extinct, at least twice
the congoid/caucasoid/mongoloid fairytale was invented to justify black-people slavery

Maybe because he didn't make any of them and they evolved to suit different climates.
