First of all North Carolina was one of the original 13 colonies and as such was already part of the Union.
Secondly Tennessee (on its western border) was considered Union by the Feds and Confederate by the CSA. As such it was immune to many of the troubles the rest of the south suffered after the war.
If North Carolina had stayed Union, it would have tied up Confederate troops. With its strategic location the march to the sea would have been easier (cutting the south from west to the east). The Union Navy was much stronger and suppling troops as well as arms to the state would have been no major problem.
So I beg to differ with the premise. North Carolina did have a choice.
