Size of eggs. How does one measure an egg? Is it based on the size of the shell, the size of the yolk or what? And what are the?

You 'measure' an egg (as small, medium, large or extra large) by WEIGHT.
Think about it ..
It would take too long in the factory when you were 'sorting them into sizes' to do it any other way but by 'the weight of the eggs'.
If it was done by size then the eggs on the conveyor belt, passing whatever was measuring them, would have to all be the 'same way round' and they aren't .. and 'the size of the yoke' would involve x-raying every egg !

The size of the shell, you don't know how big the yolk is until you crack the egg.
