how do i make zatarains wth no meat to serve as a side dish what do i reduce water to?

    just skip the meat. It won't change anything else except maybe the spices might be a bit strong.

    Just omit meat.

    If you want a meaty taste chop mushrooms, the same weight as the meat called for, saute that then finish as directed. You could do the same with other veggies a mixture of peppers, onions diced up would increase the amount so it would serve the same number of people.

    But for the box mixes you would not have to adjust for liquid if you are omitting meat.

    The rice will absorb the water as it cooks. As long as most of the water has been absorbed, you finish it off by letting the pot sit, off the heat, lid on the pot, for about 5-10 minutes.
