Why can't UK citizens join the US armed forces, Marines & why can't US citizens join the British Army, Royal Navy & Royal Air Force?

No language barrier;

Two close intelligence sharing partners and part of five eyes;

The special relationship;

Dual past assistance, help and close co-operation in all major wars and conflicts of the past;

Joint friendly and reliable allies;

Culturally close.

What is the big deal in having to hold a blue and gold or burgundy and gold passport, or why is that so essential and non negotiable to the overall recruitment and selection criteria?

It does not by itself make you a better performer.

    Citizenship, or at least being a permanent resident, has long been considered a kind of litmus test for devotion to one's country. No military force wants someone whose allegiance lies with a foreign land. However, allies do a lot of joint training and work closely together. Recently the US had to grant emergency asylum to some Turkish soldiers who were training here because Erdogan declared them enemies of the Turkish state and they'd have faced execution were they to return to Turkey.

    UK citizens who are permanent residents of the US (Green card holders) are eligible for enlistment in the US forces. No idea about US to UK forces.
