Can I us an actual digit when the digit is part of a name. Example: "Meet me at Stage 7." or would I need to write out "Stage Seven"?

Ah good question. Stage 7 would be fine if that is in fact its name and that's the way they (whoever owns that name) write it.

I am sure the stage door has a 7 on it and not seven. The number is correct.

Yes, you can, because it is part of the name. Writing it out would be strange if it is known as Stage 7.
