Should I address her by Tabitha or Tabby?

Which one should I call her by?

Update:

I don't have a cat, I'm just curious about it in humans

Well, there's more to it than just your basic Tabitha and Tabby. Look at the name what else do you see?

You can still use your basic Tabby or Tabitha I am saying but there is more to the name Tabitha. Such as, I can see the name Aia (Ayah) and Tia and Haia (Hyah)

    Who are you to her?

If you have to ask a forum you should call her 'Tabitha'.

You could ask her if any one called 'Tabby'? Her reaction should tell you if it is safe. If you are still in doubt, Tabitha.
