    As little of it as possible, whichever you choose. The secret is in minimising the quantity rather than obsessing over the quality.

    I always heard extra virgin olive oil is good for frying and thats what always used

    Olive oil, but don't use the extra-virgin for cooking, since it burns at too low a temperature.

    Sesame oil is also very good for you .. it give a wonderful flavor to asian stir-fries.
