What is the healthiest high heat cooking oil?

Refined oils such as vegetable, canola, corn, grapeseed, safflower and sunflower are all designated as high heat oils, meaning they can withstand approximately 450F.
But basically, deep-frying is NOT healthy.

Rapeseed. (canola in the USA I believe). About as high in unsaturates and polyunsaturates as olive oil but has a much higher smoke point. Olive oil breaks down under high heat and the level of saturates increases.

Olive oil has a relatively lower smoke point compared to other oils, so it's best for low and medium-heat cooking. It's also one of the healthiest oils to use when baking.
