Although I have a drawer full of stainless steel knives that never rust, my favorite kitchen knife is a large carbon steel knife. It is easy to sharpen, but it does not hold the edge for long. The greatest drawback of this knife is that it rusts very easily. After washing it, I must dry it with a paper towel and then put a thin coat of vegetable oil on it to keep it from rusting. I have used this knife for 27 years now and it is still my favorite knife!

Not unless you are talking about a Swiss knife and even still it has a durability to it so it won't immediately rust but over time rust will accumulate

Not a stainless steel knife. A carbon steel knife can rust when left wet.
