It would eat what is in the water - small baby fish, snails, vegetation in the water. Carrots are not in the water where crayfish normally are found. If you are gonna keep it, then read what it will need to survive.

possibly a slice from a can of carrots, as it is very soft.

Were there carrots growing where you found the crayfish.?

It's a freshwater crustacean not a rabbit. Give it some chopped chicken meat or shrimp

Your pet crawfish will happily eat lettuce, pieces of vegetable, algae-based foods and sinking shrimp or fish pellets. You can give your crawfish live feeder fish to eat.
