I’m thinking about getting a Sony RX100 vi for vlogs, Even though there isn’t an external mic can you still hear yourself when you record?

You really want the mic to be close to you which means using an external mic or a dedicated audio recorder. Using a dedicated audio recorder means synching the audio & video tracks in post production which isn't hard, just takes good management skills of your files.

The RX100 series doesn't have external headphone or mic jacks. If the camera is strictly for vlogs, why not get a dedicated camcorder?

As a stills camera, it's a wonderful camera for 1" sensor cameras.

Best to use a camcorder for video work. But any camcorder or still camera with a headphone socket allows you to hear what is being recorded using headphones. You cannot use the speaker in the camera because you would get feedback howling, so cameras do not allow it. The mic type makes no odds.
