bell peppers..rice......Green beans cooked, but still crisp, in oyster sauce or other clear, light sauce. Lemon and just a bit of honey is good. Cut beans about the same length as the shrimp, and serve with sweet red peppers, raw or nearly raw,........noodles, maybe with a mild curry or ginger (optional cayenne) flavoured oil based sauce. With garlic. Shrimp goes well with garlic......Zucchini, sliced lengthwise, and grilled hot, with a cornstarch thickened lemon garlic sauce. Cayenne optional.......A salad is always welcome and perhaps some crusty garlic laced baguette toasts to sop up the juicy gravy from the etouffée. Haricot Verts (green beans) are wonderful. Steam fry or saute the beans, add a little bacon, onion and garlic, a 1/4 cup of white wine or sauterne or cooking sherry, cover and lower heat to cook for 5–10 minutes till the beans are done but not soggy and limp.
The etouffée is rich and filling so offer lighter fare to offset that. For dessert, a fruit tart or tarte tatin, or fresh fruit compote, pêche au vin (peaches and wine), or a very light pate choux with fruit....................hope this helps..yummy.
