Because you boil out the oxygen and the water is flat.

It's because you boil out the miniscule oxygen bubbles trapped in the water so you experience it as very "flat," almost cloying on the tongue. If you were to re-aerate the water by pouring it back and forth from a height between two jugs a few times it would taste better.

If you collect the steam and then let it condense to water, the water should have no taste. That’s called distilled water.

Boiled water tastes bad because the metal from the pot is seeping into the water. If you put water in a glass container that’s been cleaned and nuke it in the microwave then filter the water, it shouldn’t have any taste. Tap water is full of minerals and then you boil it, it gets more concentrated so that’s what you’re tasting (besides the metal from the pot).

Bay, then you didn't pay attention in 7th grade science. It's a popular experiment to prove the physics behind it.

Boiling water kills the germs but it doesn't get rid of other impurities. Water is neutral so if you taste anything in your water it meas that it has been contaminated with something (not necessarily dangerous). Water from different sources taste slightly different because there are different contaminants in it.
