    Red cabbage has more anthocyanin pigment antioxidants which gives its sharp, biting flavor over green cabbages.

    Eat them more in raw salads, coleslaw, rolls, etc.

    its the same flavor, the only difference is color, as is with purple cauliflower or asparagus

    In general red cabbage will taste slightly different from the various types of green cabbage. However as with cabbage, the taste can and usually depends on the type of soil it's grown in. Some red cabbage will be milder, and yet it can have a peppery like taste to it.

    Yes. I love red cabbage in salad! The difference is more in texture than taste though. It's crispy!
