If you are having trouble with gluten, keep in mind wheat can be found in trace amounts in a load of things, and you might not even realize it. Even licking an envelope will put you in contact with it.
Especially given that you seem to be up against a situation that is causing inflammation, go get some professional help. There are missteps you will want to avoid, especially since you can get sick for so long if you eat the wrong thing. It's not clear where you should turn, without knowing what you must avoid and why.
White fish such as cod or haddock is easy on the gut, and can be poached in a quiche plate with a little water in the microwave.
Sweet potatoes can be baked in the microwave as well, and are wonderful with cook chicken- if you get the flash frozen chicken tenders, those can also be poached covered in the microwave, and mixed into a sweet potato.
If you can eat bananas, that helps a lot. Have a little maple syrup on it to perk it up. Same with the sweet potato.
