I mix salt, pepper, basil, ground coriander, paprika, cayenne pepper, garlic and a bit of sesame oil in a bowl then let the chicken marinate in it overnight.

I happen to love lemon, garlic, salt and pepper.
Sometimes I will dredge in breadcrumbs mixed with Parmesan cheese or Romano cheese. Then just bake. Great "fried chicken" crunch but it is baked and has more flavor due to the cheese.
