Chicken Ratatouille -- 2 tbs olive oil, sliced garlic, pound of chopped chicken breast, two zucchini, small diced eggplant, large sliced onion, chopped large bell pepper, half pound of sliced mushroom caps, pound sliced roma tomatoes, half glass white wine, tsp basil, tbs parsley, quarter to a half tsp black pepper. No salt. Very healthy.
Not that I care, I like it because it tastes fabulous. Serve with toasted french bread butter garlic, white wine.
