The creators behind the MCU have stated that the Mind Stone was influencing him during Avengers 1. But there's nothing in any of the films to suggest this, and it really doesn't fit with the arc we see happen.

In Thor 1, for the first hour of the movie, he feels very much like one would expect of Loki. He's out for himself and manipulative, trying to set himself up for the throne. But he's very subtle about it and rarely even lies in the process of his methods. He's not really out to hurt anyone; just get Thor out of his way to the throne of Asgard. But then he becomes a generic megalomaniac in the last 30 minutes.

In Avengers, he's trying to conquer Earth. Not as good as Asgard (in his opinion, he sees humans as lesser than Asgardians, at least at this point), but it still would make him king of a planet. And in that context, his actions make perfect sense and again aren't that different.

Thor 2 sees him shift some, but he's still being selfish. He's just completely driven in that movie toward getting revenge for his mother's murder. And in the process, he does seem to bond with Thor. Though he still uses his guile to fake his own death and replace Odin on the throne.

Thor 3 he's largely in survival mode, gathering as many allies as he can. Thor sees through his ruse, and Loki knows he can't win that fight. Then almost immediately Hela shows up and lays claim to Asgard's throne, and Loki knows he needs to defeat her, but she will kill him if he tries. Then he ends up under the Grandmaster, who is likely insanely strong even without all the power and influence he has on Sakaar. Loki just never has stable footing to work from, other than his trust in his brother.

people like Tom Hiddleson as Loki too much, so they made him a good guy.... well a less evil guy.

same way they turned mystique and megneto into a goodish guys in the x-men movies fastbender and lawrence just that popular.

Loki is the god of mischief and strife. He should be that way all the time, unless he is tricking people (which would be appropriate). Of course Hollywood doesn't respect that and he's just another fictional character to them to do with what they want. A little hypocrisy doesn't matter as long as the dough is rolling.

During the first Avengers Loki was being controlled by the Mind Stone, which Thanos gave him in his staff. The stone enhanced his darker emotions and made him much more villainous than he actually was. In later movies with the stone gone he went back to his normal less-evil self.
