Yes there is a risk.
There is a warning at the bottom, or someplace on the menu that warns people that eating raw or under cooked meats, eggs, fish can make you ill. The warning specifically mentions young, older persons and those with poor immune systems.
You make the choice to order the food the way you want it.
Sushi restaurants would not do well if they HAD to cook all their fish, Steakhouses would not do well if they HAD to serve all their meats "well" done.
The few hamburgers I eat per year I choose to have medium rare, steaks the same, my sushi raw, my pork with a tinge of pink and my chicken, turkey and other poultry done. I like my eggs "over easy" with runny yolks. What can I say I like to live "dangerously"
