What vegetable would go well in or with a mixed seafood risotto?
I will include onion in the risotto, besides that it is a choice between peas and sweetcorn or mixed French vegetables. Secondarily, would it be better to add the veggies to the risotto or serve them on the side?

I would do the mixed French veggies and put it on the side. I would also throw in some carmelized onions with the vegetables but that’s just me

Not corn. Corn is a starch and you don't need more starch in a risotto.

mushrooms, celery, and celery root go good with seafood, as well as bell pepper

Peas are somewhat traditional depending on who makes it. I usually put asparagus. Cook it first and then stir it in at the last minute.

Peas if they are young ones.
Asparagus would be good. (I would roast the asparagus)
I would serve them on the side but if you wanted to adding peas or the asparagus to the risotto would be acceptable.
Or a mixed green salad served on the side would also be a good option, nice and light and bright next to a filling risotto.
